Make ahead recipes for Eid trolley,,Eid-ul-Fitr preparations 

Eid is the occasion that everyone waits for. After fasting for 30 (or 29) days, it’s finally time to celebrate! There is always excitement and anticipation for Eid and you can feel it all round you. Preparations for the Eid day begins as soon as the moon is sighted!

However, considering how Pakistanis have their own twist for everything, here are the things that we always do on chand raat.
Let the celebrations begin!
1. The hunt for the chand

Holding our breaths, we either sit in front of the LCDs and wait for the Royat-i-Hilal committee to say the magic words “”Eid ka chand nazar aa Gaya hay””

2. CHAND RAAT MUBARAK! Calls and messages to relatives and friends

3. trips to the tailor (darzi) or to exchange clothes that you buy wrong sized..
4:::Stocking the house with cold drinks,cakes ,mithai, nimco ,chips ,chocolates ,fruits and other culinary delights!

There is a rush at every bakery, mithai ki dukaan and doodh ki dukaan and we all know why! Be it the gulab jamun or the sheer khurma, food is an integral part of desi festivities!

5. Buying shoes at the last minute

6. Buying  Chooriyaan and mehndi for the ladies

7:::Personal grooming with facial or face wash.

8::Making Eidi envelopes with new bank notes.

While husbands and sons  think about all the food they will  have on Eid.So mothers, sisters and wives get down to business in the kitchen. Be it the traditional Nihari,haleem,pulao, Qorma, Biryani or desserts like Sheer Khurma, siwayaan,rusmalai,shahi tukray every single dish is worth dying for!

So today I am sharing some make a head and quick recipes that you can make at chand Raat and be ready for Eid.


India, Pakistan and Bangladesh has very hot traditional dishes to celebrate Eid-ul-Fitr, a three-day holiday at the end of Ramadan. Special dishes include sheer khurma  and Other sweet dishes. One is old traditional recipe which is qiwaami siwayaan ,a type of vermicelli.

Event though Muslims come from from different cultures and backgrounds, hence what you cook on Eid day may vary. But there are few things that you would find common on Eid is vermicelli.

Pakistani Eid Special Make ahead and quick Recipes that you can make at chand Raat ..

Menu 

1::Sheer khurma

2::Shahi tukray

3::Pakistani style foil packet Chicken 

4::Chicken kababs

Along with fruits,nimco,chips,cold drinks,juices and some bakery items.

1:::Karha  hoa Sheer khurma

You can make this special Sheer khurma with fresh milk that is available on Nagori milk shop .Do not use the tetra pack milk.Milk should be reduced to 45 % at low flame  to make perfect owtaa hoa doodh.

Ingredients Of Sheer Khurma
2 litres fresh milk
1 cup vermicelli

2 tbsp  ghee or oil

1/2 tsp cardamom powder
6 soft dates, sliced

pistachio crushed

almonds crushed

1 cup sugar

Method Of Sheer Khurma
Boil fresh milk (do not use tetra pack milk for this recipe)and turn the heat low.Leave it at low flame till changes its colour and reduce 45%

Heat ghee in a frying pan and fry vermicelli on low heat till it turns light brown in colour.Then add nuts and fry for a second.

Then add it in boiled milk with sliced dates ,cardamom powder and sugar .cook for 10 minutes at low flame till  milk start thickens.Take out in a bowl and let it cool. Garnish with nuts and keep it in refrigerator till serving.

2::Shahi tukray

Ingredients
Bread slices (diagonally sliced) 8
Oil for frying
Yellow food colour 1/2 tsp
Milk 1 liter (reduced 750 ml)
Sugar 1 cup
Khoya 250 gm

Sliced Almonds and pistachios for garnishing
Cardamoms (grounded) 1 tsp
Cooking Directions
Trim the bread crusts from the bread.Cut bread slices in half.
Shallow fry bread  till golden brown.

Cook milk,cardamom ,food colour and sugar on low heat till your have a thick sauce mixture.

Take a serving dish arrange bread slices.

Cover the bread with khoya.

Pour hot thick milk sugar mixture on top of bread slices.
Cover and let the bread soak in the moisture.
Sprinkle the nuts on top.keep refrigerated when cool.

  3::Pakistani Style Foil Packet Chicken 
ingredients

Chicken 1 kg 12 pieces
Roasted cumin powder 1/2 teaspoon
Garam masala powder 1/4 tsp
Red chilli pwd 1 tsp
salt 1 tsp
Ginger garlic paste 1 tbsp
Turmeric powder 1/4 teaspoon
Roasted coriander powder 1/2 tsp
Chaat Masala powder 1 tsp
Yogurt 2 tbsp
Oil 2 tablespoons
Method
Take a bowl and add chicken pieces.Add all the given ingredients .Mix well .Marinate Chicken for 2 hours to make juicy and tender chicken.

You can marinate it at chand Raat and then bake on Eid morning.

How to bake:::

Preheat oven at 200 degree centigrade.
Take a baking pan .Spread aluminium foil and put marinated chicken over the foil.Cover it tightly by sealing edges of the foil tightly.Bake for 45 minutes.If you have some liquid at the end of baking then open the sealing of foil and let it dry on high temperature of oven..Drizzle some oil at the end.Now Foil packet chicken is ready to serve it is spicy because it is Pakistani style Foil packet chicken.

How to make Foil packet Chicken on stove top

You can also make it in a pot on stove top.Just wrap the chicken in aluminium foil and put it in a pot .Cook for 20 minutes then cook uncovered till all juices dries up.drizzle some oil at the end.It will take less time than oven.

4::Chicken kababs

Ingredients

Chicken mince 1 kg
Fine chopped Onion 1
Ginger 1 medium piece or 1tbsp paste
Garlic paste 1 tbsp

Fine chopped Green chilies 3
Salt 1 tsp
Roasted coriander powder 1 tsp

Roasted cumin powder 1 tsp

Red chilli powder 1 tsp

Shan Seekh Kabab Masala 2 tbsp

Oil 2 tbsp

Bread crumbs 2 cups

Instructions

Mix all above ingredients in chicken mince.

leave it to marinate for 1 hour.
Apply oil on hands. Make kebab in your required  shape .

Make these at chand Raat .Keep them in freezer .You can fry quickly when needed.

For frying:::

Fry on medium high heat till done.Make sure they are perfectly cook from centre.Turn the heat high at end to give nice colour.
