Curry (shorba)base for 1 kg meat (for 6 persons)
oil 5 tbsp
Onions 4 (sliced)
Ginger paste 2 tbsp
Garlic paste 2 tbsp
Red chili powder 1 tbsp
Turmeric powder ½ tsp
Coriander powder roasted 1 tsp
Salt 1 n 1/2 tsp
Cinnamon sticks 3
Green cardamom 4
Black pepper 5
cumin 1 tsp
Ripe tomatoes 3
Yogurt 1 cup
Heat oil in a pot.
Add sliced onion, fry till they are lightly brown.take it out from oil.Then add whole (spices)garam masala in oil.Now
Add in ginger paste and garlic paste, fry again till it releases aroma.
Grind fried onion ,tomatoes and yogurt.
Now add this well grinded mixture in the pot and fry nicely.
Mix in salt,coriander powder, red chili powder, turmeric and fry well.
Cool and Store this curry base in zip lock storage bag ,keep frozen.
You can use it for egg curry,chicken,mutton ,fish,lamb,beef ,or vegetable curries,paneer masala……etc
Just add additional spices as required…
for achari chicken you can use this curry base with just adding achari masala in the chicken.
For making special chicken curry with a creamy texture ,,,,you can use this curry base ,,just grind 1 tbsp Desicated coconut and 1 tbsp poppy seeds in coffee grinder and add in the chicken,,,fry with this curry base and add some hot water ….
